Tandoori Cauliflower Bites

This is one of the simplest and tastiest plant based swaps to a well known dish that traditionally contain chicken.

Healthy baked tandoori cauliflower bites that sound fancy (look and taste fancy, too) but are very easy to make at home. This Indian spicy cauliflower is an ideal party snack to impress guests. Don’t be intimidated by the long list of ingredients, the cooking method is as straightforward as it can get.

Cauliflower Bites:
• 1 cauliflower, cut into florets
• 1 cup coconut yoghurt
• 1 tbsp maple syrup
• 2 tbsp tandoori spice mix
• 1 tbsp olive oil

Tandoori Spice Mix:
• 1 tsp garam masala
• 1 tsp coriander powder
• 1 tsp cumin powder
• 1 tsp turmeric powder
• 1/2 tsp cayenne
• 1 tsp paprika
• 1⁄2 tsp garlic powder
• 1 tsp salt

1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a large mixing bowl, stir together the coconut yoghurt, maple syrup and tandoori spice mix.
3. Add the cauliflower and stir until coated.
4. Place cauliflower bites on a baking tray, making sure there is space between each piece.
5. Bake in the oven for 30 minutes. Take out and flip the florets around, and bake for a further 10 minutes.
​6. Pile the cauliflower bites into a bowl and enjoy!

Optional dip:



1 cup cashews (soaked for 1 hour or overnight)
1 tbsp apple cider vinegar
juice of 1 lime
1 tsp lime zest
1/4 cup fresh coriander
2–5 tbsp cold water
sea salt, to taste

Drain your cashew nuts.
2. Add cashew nuts to a high speed blender and pulse for 30 seconds.
3. Add the apple cider vinegar, lime juice, lime zest, fresh coriander, and a pinch of salt to the cashew nuts.
4. Blend for 2 minutes, adding a little water as you go, until you have your desired consistency.
5. Season to taste, adding more salt or lime for acidity.
6. Serve in your favourite Coconut Bowl. Enjoy!
