Cold chia pudding topped with warm, spiced apples — this is a breakfast recipe that can be served as a dessert.
INGREDIENTS
- CHIA PUDDING
- 50g chia seeds
- 200ml plant milk
- APPLE PIE TOPPING
- 1 apple, cored and chopped
- 2 tbsp maple syrup
- a dash of cinnamon
- a pinch of sea salt
- a handful of walnuts, chopped
METHOD
- Combine your chia pudding ingredients in a small bowl and store in the fridge to set for 4 hours or overnight.
- Before serving, place all your apple pie topping ingredients in a small sauce pan, and simmer on low-medium heat for about 10-15 minutes until the apples are soft.
- Transfer the chia pudding in your favourite Coconut Bowl and top with the apple pie topping! Enjoy!
