Cold chia pudding topped with warm, spiced apples — this is a breakfast recipe that can be served as a dessert.

INGREDIENTS
  • CHIA PUDDING
    • 50g chia seeds
    • 200ml plant milk
  • APPLE PIE TOPPING
    • 1 apple, cored and chopped
    • 2 tbsp maple syrup
    • a dash of cinnamon
    • a pinch of sea salt
    • a handful of walnuts, chopped
METHOD
  1. Combine your chia pudding ingredients in a small bowl and store in the fridge to set for 4 hours or overnight.
  2. Before serving, place all your apple pie topping ingredients in a small sauce pan, and simmer on low-medium heat for about 10-15 minutes until the apples are soft.
  3. Transfer the chia pudding in your favourite Coconut Bowl and top with the apple pie topping! Enjoy!
