We are loving the creativity of our Coco Community. @crazy.mango.girl here created an even more nutritious porridge recipe for you to try! This Carrot Cake Porridge should be the top on your list of must-try recipes! 

SERVES 1-2

INGREDIENTS
  • CARROT CAKE PORRIDGE
    • Carrot, 1 large (grated)
    • Raisins, 2 tbsp
    • Cashew Butter, 1 tbsp
    • Gluten-free Oats, 1 1/2 cups
    • Almond milk, 2 1/2 cups
    • Maple Syrup, 1 tbsp
    • Ginger Powder, 1/3 tsp
    • Cloves, 3
    • Nutmeg Powder, a pinch
    • Cinnamon Powder, 1/2 tsp
    • Himalayan Salt, a pinch
  • OPTIONAL TOPPINGS 
    • Coconut Yogurt
    • Apricot Jam
    • Cinnamon Granola
    • Kumquats
    • Millet Puffs
    • Chopped Pecans
METHOD
  1. Combine all ingredients in a saucepan and cook on low heat for about 10 minutes. Add more almond milk if too thick and dry. 
  2. Toppings are optional but highly recommended!
  3. Cool down for a few minutes and serve this with your favourite Coconut Bowls and enjoy!
