This coconut and lychee nice cream is the ultimate refresher. It is made using 3 simple ingredients and tastes just like lychee sorbet! We haven’t found anywhere to purchase frozen lychees so we recommend buying them fresh and freezing yourself the night before making. 

For a nutrient boost try adding a coconut based protein powder. This also enhances the delicious coconutty flavour.

Serves 2-3

INGREDIENTS
  • Coconut Flesh, 300g (frozen)
  • Bananas, 3 (frozen)
  • Lychees, 2 cups (frozen)
METHOD
  1. Combine all ingredients in a high-power blender.
  2. Transfer into your favourite Coconut Bowls and add desired toppings. We serve with raspberry coulis, fresh raspberries and coconut flakes. Enjoy!
