RECIPE BY  @LAFORANCE IN PARTNERSHIP WITH BIONA ORGANIC

Our friend Ada from Laforance created this wholesome and filling rice pudding recipe made with 100% organic ingredients while also using Biona Organic products. The rice pudding is slightly sweet, filling and delicious, while the maple-glazed pineapples are so irresistible.

INGREDIENTS
  • RICE PUDDING
    • 1/2 cup uncooked sticky rice or jasmine rice
    • 1 cup filtered water
    • 2 small pieces of fresh ginger or use 1/2 tsp ginger powder
    • 2 pcs lemon peel, organic and unwaxed
    • 1 can Biona Organic Coconut Golden Milk
    • 1 tsp cinnamon
    • a pinch of salt
  • RECOMMENDED TOPPINGS
  • MAPLE GRILLED PINEAPPLE
    • 1 ripe pineapple
    • 1/4 cup coconut oil
    • 1/4 cup maple syrup
    • 1/4 cup coconut sugar or brown sugar
    • 2 tsp cinnamon
    • extra coconut oil to oil the grill
METHOD
  1. RICE PUDDING
    1. Add rice to a saucepan with the water and ginger and lemon peel.
    2. Bring to a boil and simmer for 10 minutes, covered with a lid.
    3. Add the Biona Organic Coconut Golden Milk and cinnamon.
    4. On medium heat, simmer for another 15 minutes with the lid off. Stir often.
    5. Stir in the salt and keep simmering for a couple more minutes, until the rice pudding is thick and creamy to your taste.
    6. Let it cool for a few minutes and serve in your favourite Coconut Bowls!
  2. MAPLE GRILLED PINEAPPLE
    1. Start heating up your grill pan.
    2. ​In a small bowl, whisk together the coconut oil, maple syrup, brown sugar and cinnamon.
    3. ​Oil the grill pan (to prevent the pineapples from sticking to the grill).
    4. ​After placing the pineapple slices in the pan, brush the coconut oil and maple syrup mix glaze over the slices and turn them over with tongs.
    5. ​Brush the other side of the slices and cover with a lid.
    6. ​Grill the pineapple slices for about 3 to 4 minutes.
    7. ​Open the lid and turn the slices over. Brush them with the glaze again.
    8. ​Close the lid and continue to grill the pineapple slices for another 3 to 4 minutes / keep repeating until it becomes golden brown
    9. ​Remove the lid and place the pineapple slices onto a serving dish.Let it cool slightly and place them over the rice pudding along with the other toppings.
    10. Enjoy!
