If you’re one of those people that love Pistachio ice-cream, you won’t be able to get enough of this healthier (and even more delicious) alternative. It takes just 6 natural ingredients to make – we recommend using activated pistachios for enhanced flavour and digestibility. Enjoy!

Serves 4

INGREDIENTS
  • Bananas, 4 (frozen)
  • Coconut Flesh, 100g (frozen)
  • Avocado, 1/2 
  • Pistachio Nuts, 1/2 cup
  • Coconut Milk, 1/4 cup
  • Vanilla Essence, 1/2 tsp
METHOD
  1. Combine all ingredients in a high-powered blender, blend until smooth and creamy.
  2. Spoon into an ice cream tray and place in the freezer for 30 minutes to an hour.
  3. Using an ice-cream scoop, scoop into your favourite Coconut Bowls and top with pistachio nuts.
