RECIPE BY KELSI FROM HEALTHY KELSII
Here's a fuss-free salad to brighten your day! Delicious and vibrant, this Rainbow Slaw with Asian Dressing and Sesame Tofu will be a delight to your tastebuds!
INGREDIENTS
- RAINBOW SLAW
- 1 red capsicum
- 1 yellow capsicum
- 3 kale leaves
- ¼ purple cabbage, thinly sliced
- 1 large carrot julienned
- large handful of coriander, chopped
- large handful of mint, chopped
- large handful of basil, chopped
- SESAME TOFU
- 300g firm tofu, sliced into cubes
- 3 tbsp tapioca flour or corn flour
- 1 tbsp sesame oil
- DRESSING
- 1 tbsp soy sauce or tamari
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tbsp vegan aioli
- 1 tsp grated ginger
- 2 garlic cloves, crushed
METHOD

In a large bowl add all of the slaw ingredients and mix well.

Coat the tofu in the tapioca or corn flour, and place in a hot pan with sesame oil Cook for 2-3 minutes on each side until golden. Remove from heat and set aside.

For the dressing, add all of the ingredients into a bowl and mix well.

Drizzle and massage the dressing through the salad.

Serve in your favourite Coconut Bowl and top with sesame tofu and some fresh herbs.
