RECIPE BY KELSI FROM HEALTHY KELSII

Here's a fuss-free salad to brighten your day! Delicious and vibrant, this Rainbow Slaw with Asian Dressing and Sesame Tofu will be a delight to your tastebuds!

INGREDIENTS
  • RAINBOW SLAW
    • 1 red capsicum
    • 1 yellow capsicum
    • 3 kale leaves
    • ¼ purple cabbage, thinly sliced
    • 1 large carrot julienned
    • large handful of coriander, chopped
    • large handful of mint, chopped
    • large handful of basil, chopped
  • SESAME TOFU
    • 300g firm tofu, sliced into cubes
    • 3 tbsp tapioca flour or corn flour
    • 1 tbsp sesame oil
  • DRESSING
    • 1 tbsp soy sauce or tamari
    • 1 tbsp maple syrup
    • 1 tbsp apple cider vinegar
    • 1 tbsp vegan aioli
    • 1 tsp grated ginger
    • 2 garlic cloves, crushed
METHOD
  1. In a large bowl add all of the slaw ingredients and mix well.

  2. Coat the tofu in the tapioca or corn flour, and place in a hot pan with sesame oil  Cook for 2-3 minutes on each side until golden. Remove from heat and set aside.

  3. For the dressing, add all of the ingredients into a bowl and mix well.

  4. Drizzle and massage the dressing through the salad.

  5. Serve in your favourite Coconut Bowl and top with sesame tofu and some fresh herbs. 

  6. Enjoy!
