RECIPE BY FRUITY EMZ

If you haven't tried making your own granola yet, then this is the very reason you should start making them. This recipe is naturally sweetened and only uses 100% plant-based ingredients. Making this a lot healthier than store-bought varieties.

INGREDIENTS
  • 4 cups rolled oats
  • 1 cup mixture of almonds, walnuts & cashews
  • 1/2 cup pistachio
  • a pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 cup peanut butter
  • 1 cup ripe banana, mashed
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
METHOD
  1. Preheat oven to 135C and line a baking tray with parchment paper. 
  2. In a mixing bowl, combine the oats, nuts, cinnamon and salt. 
  3. In a small saucepan, warm coconut oil and maple syrup. Add in the vanilla extract.
  4. Turn off heat and add mashed bananas and peanut butter.
  5. Pour the wet ingredients to the dry mixture. Toss and mix to coat well.
  6. Transfer mixture to the baking tray and bake for 1 hour, rotating the tray halfway through.
  7. Remove from oven and let cool completely before breaking up into chunks.
  8. Serve in your Coconut Bowls and enjoy with your fave plant-based milk!
