Start the day right with this Warm Chai Spiced Chia Pudding with Cinnamon Apples. Perfect for fall, this tastes amazing and is such a nice comfort food to have especially for breakfast. To make this even more decadent top it off your favorite nut butter.
SERVES 1
INGREDIENTS
- CHIA PUDDING
- Almond Milk, 1 cup
- Maple Syrup, 1-2 tsp
- Chia Seeds, 3 tbsp
- Cinnamon, 1/2 tsp
- Cardamom, 1/2 tsp
- Ground Ginger, a pinch
- CINNAMON APPLES
- Apple, 1 (peeled and diced)
- Maple Syrup, 1 tbsp
- Cinnamon, 1/2 tsp
- TOPPINGS
- Almond Butter
- Pecans
METHOD

Start by cooking the apples. Add the apples and cinamon to small pot with a good splash of water. Simmer for a few minutes until the apples start to soften, add more water as necessary. At the end add the maple syrup and stir to coat. Remove from heat and reserve until serving.

Meanwhile, make the chia pudding by combining all the ingredients in a small pot and bring to a simmer while stirring. Simmer for 2 minutes, stirring often.
- Serve in your favorite Coconut Bowls.

Top the pudding with the apples, chopped pecans and almond butter. Enjoy!
