RECIPE BY RUN 2 FOOD
This pesto pasta salad recipe is rich in protein so its perfect for those who are looking to increase their protein intake. It's very filling as well, one serving will keep you full for longer thanks to the protein-rich cannellini beans.
INGREDIENTS
- PESTO SAUCE
- Fresh Basil, 1 cup
- Cannellini Beans, 1 cup (drained)
- Pine Nuts, 1/4 cup
- Lemon Juice, 2 tbsp
- Almond Milk, 2 tbsp
- Sea Salt, 1/2 tsp
- Nutritional Yeast, 2 tbsp
- PASTA SALAD
- Pasta, 1 cup (cooked)
- Pumpkin, 1/4 cup (cooked)
- Cherry Tomatoes, 3-4
- Spianch, 1 cup
- Pesto Sauce, 1/2 cup
METHOD
- To make the pesto, add all the ingredients in a food processor and blend until there are no more chunks.
- In your favourite Coconut Bowl, add all your pasta ingredients and toss with a few tbsp of your homemade pesto.
- Enjoy!
