RECIPE BY KELSI FROM HEALTHY KELSII

Who knew laksa can be so easy to make? Get all the ingredients and make this on the weekends. Each spoonful is so flavourful and a little bit spicy.

INGREDIENTS
  • CURRY PASTE
    • 1 shallot
    • 3 garlic cloves
    • 1 stalk lemongrass
    • handful of coriander
    • 1 tsp ground cumin
    • 2 cm fresh ginger
    • 1 spring onion
    • dash of water
  • LAKSA
    • 400ml coconut milk
    • 1 tsp soy sauce
    • 1 tbsp lime juice
    • 2 cups bok choy, sliced in half
    • 1 capsicum, sliced
    • 300g firm tofu, cubed
    • 180g noodles
    • 1 cup mung bean sprouts
    • handful of coriander
    • 1 chilli, sliced
METHOD
  1. In a food processor or blender, add all your curry paste ingredients and blend/pulse until it turns into a paste.
  2. Cook the paste in a medium pan over medium heat. Be careful as the paste can burn if left unattended.
  3. Add the coconut milk, soy sauce and lime juice. Stir and cook for 5 minutes. 
  4. Add in the bok choy, capsicum, tofu and noodles. Cover with a lid and simmer for 5 minutes until veggies and noodles are cooked through.
  5. Let cool for a few minutes, then serve in your favourite Coconut Bowls.
  6. Top with mung bean sprouts, fresh coriander and chopped chili.
  7. Enjoy!
