Banana Bread Chocolate Chunk Granola

Banana Bread Chocolate Chunk Granola

This homemade granola recipe is easy to make and it is sweetened with bananas and maple syrup. The chocolate chunks are melt in your mouth and the ground cinnamon gives off just a hint of spice but makes the overall taste and aroma incredible.

  • 2 large ripe bananas
  • 60ml maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 24g rolled oats
  • 65g almonds, chopped
  • 20g flax meal
  • 65g coconut flakes
  • 50g chocolate, chopped
  1. Preheat the oven to 160C and line a baking tray with baking paper.
  2. In a mixing bowl, mash bananas until smooth. Add in the maple syrup and vanilla extract, and stir until well combined.
  3. Add in the oats, almonds, coconut, flax meal and cinnamon. Stir until everything is covered in the wet mixture and the mixture forms large lumps.
  4. Transfer mixture to baking tray and bake for 40 minutes, until lightly golden and firm to the touch.
  5. Once baked, remove from oven and let granola cool completely before breaking them into chunks.
  6. Fold in chocolate.
