IN PARTNERSHIP WITH PIMP MY SALAD
Silky, and creamy, melt in your mouth potato salad. It's oil-free and guilt-free, so it's ok to get another serving if you wish! Add texture and flavor by adding a few shakes of Sea Superfoods Sprinkles!
INGREDIENTS
- 1 kg potatoes, cooked and cooled completely
- mixed fresh herbs, chopped
- 2 tbsp capers
- Pimp My Salad Sea Superfoods
- DRESSING
- 300g silken tofu
- 40g cashews
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 1/2 tsp dijon mustard
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- cracked pepper, to taste
METHOD
- Place all your dressing ingredients in a blender or food processor and blend until smooth and creamy.
- In a large bowl, place all your salad ingredients and mix until all potatoes are coated with the dressing and the herbs.
- Serve in your favourite Coconut Bowls and sprinkle some Sea Superfoods crunch for texture. Enjoy!
